Mango Quesadilla Recipe to Your Weekly Meal Plan

If you are like me, it is so easy to get off track with eating better! I wanted to tell you that you need to add Mango Quesadilla’s to your weekly meal plan!  They are yummy, have tons of flavor, and add some variety to your plain ‘ol quesadilla recipes!  Try out this recipe today!

Mango Quesadilla Recipe

Ingredients:

2 small boneless, skinless chicken breasts
1 8 oz can tomato sauce
1 dried ancho/pasilla chile pepper, stemmed and seeded
4 burrito size flour tortillas
6 ounces Hiland Dairy Shredded  cheese
1 ripe mango, peeled, pitted and thinly sliced
¼ cup minced red bell pepper ¼ cup sliced green onions
Add some Hiland Dairy Sour Cream on your Quesadillas (optional)!

Directions:

Directions: Cook chicken on a lightly greased grill over medium heat for about 5 minutes on each side or until lightly charred and cooked through. Let cool slightly and cut into bite size strips. Puree the tomato sauce an dried pepper in a blender or food processor. Transfer to a small saucepan and simmer over medium heat for 15 minutes. Add grilled chicken to pan and toss well to coat; season to taste with salt. Place flour tortillas on a flat surface. Top half of each tortilla with equal amounts of cheese, mango, bell pepper, green onion and chicken; fold over tortilla. Cook in a large skillet (with a bit of Hiland Dairy butter) on both sides until cheese is melted and tortilla is crisp about 5 minutes on each side. Serve with mango salsa.

A few months ago, we talked about making better choices with your meal purchases!  Now since the newness of the resolutions have started to weigh you down and it is easy to get side tracked off your diet, you should really think about meal planning!  Sunday at our house had always been our meal prep day, but we would only prep our lunches!  My lunch usually consisted of chicken and green beans.  I ate that daily for quite some time!  Now, we are needing some variety and have made the decision to start eating at home more often.

Be sure to look in your grocery store for other Hiland Dairy products!  They are very much about quality and quality of life!  Find products in your grocery store and be sure to check out our other Hiland posts!

Eating at home more often is so tough since I have two jobs, my husband works, I travel, we have two kids, and we are about to sell our home.  Life is tough!  Thanks to signing up with Hiland Dairy’s Meal Prep, staying on track to make better choices and save money will be a bit easier!     Meal planning is where it’s at! I do meal planning in our family and use a couple freezer crock pot meal plans that seem to be well portioned for our family of four. it’s a long prep day in the kitchen (about 3-5 hours) but it’s so worth having a month’s worth of meals that I can just throw in the crock pot each day to help. Plus, since I’m making them myself, I get to control the ingredients more and can make it a bit healthier!

    Those quesadillas do look tasty by the way!
